Hand washing and heartburn

I've spent the weekend with the lovely boyfriend, never such a great thing for any healthy eating or even good quality eating ambitions. He's been madly saving money to take his lad away on holiday and it's been dads as well as mums going to Iceland recently.

He has a real ice cream fetish, I think if were to cover myself in Vienetta or mint choc chip ice cream he'd find me even more irresistible than he already does. Anyway, the weekend was a bit of a junk food fest except for lunch at the 'in-laws' - I decided I have to ask his mum how she gets roasties so crispy with spray oil, they were yummo!

I did the Tesco shop online so have lots of yummy goodies arriving. Tomorrow!

I wore the funky new crochet top at the weekend but found out to my dismay that it's handwash only. Not the end of the world except that I have nowhere to hang dripping crochet tops indoors so it's going to have to wait. Argh! And the junk food fest at the weekend has given me heartburn. Well, it certainly sounds like a Monday!

Strawberry Ripple Mascarpone Parfait




Part I

Tonight's tea was a bit of a disaster and I'm just drinking a glass of wine because...well, it's Friday. I'm drinking a Portuguese Chardonnay from Asda, called Tagus Creek which is very tasty. I'm no wine critic, I either like it or I don't, basically.

After two mouthfuls of Italian Chicken & Mozarella melt, I had to put my plate back in the oven to keep warm. My parents have gone away for a few days and left a family friend in charge of looking out for my lovely gran, who has dementia, but forgot that they'd had the locks changed since she last went round. Her key didn't work. By the time I got back - after bumping into a friend I hadn't seen since about 1993 on the way - my lovely green sugar snap peas had turned up at the corners. Bugger.

I did sneak a couple of bits of Co-op Brunswick Ham from the fridge beforehand as I was so hungry. I had a garlic and herc ciabatta roll with it to soak up the tomato sauce and I can still taste it now...

Have got berries and Carte D'Or Cinnamon Waffle ice cream for dessert. It's one of my top three ice creams of all time so perfect for a lacklustre Friday evening. So looking forward to seeing the man tomorrow. I'll be wearing my new crochet top and rocking the black leggings and tunic look for the day.

Part II Strawberry Ripple Marscapone Parfait

A parfait or semifreddo is just a frozen pudding, and a very simple way of making a very delicious type of ice-cream without too much stirring!

Mascarpone cream cheese, from the north of Italy, goes very well with strawberries. The crunchy Amaretti biscuits and Amaretto liqueur in the recipe add a delicious bitter almond flavour to cut through the creaminess of the pudding. All ingredients can be found in a good supermarket or delicatessen.

Serves 6 - Preparation time: 15 minutes - Freezing time: 12 hours (or overnight)

You’ll need:

  • 100g soft Amaretti biscuits
  • Splash of Amaretto liqueur
  • 400. Sweet Eve strawberries
  • 4 fresh free range eggs, separated
  • 100g caster sugar
  • 250g Mascarpone cream cheese

What to do:

Carefully line the base and the sides of a 1 litre plastic lunch box, or plastic Tupperware container with cling film that overlaps down the side.

Crush the soft Amaretti biscuits all over the base of the lunch box, and drizzle some Amaretto liqueur over them.

Hull the strawberries and crush them in a bowl, using a fork. Spoon half of the crushed strawberries all over the Amaretti covered base of the lunch box.

Using an electric whisk, beat the egg yolks with the sugar, till light and fluffy. In a separate bowl, whisk the egg whites till they form soft peaks. Fold the egg whites into the egg yolk and sugar mix, carefully retaining the air inside the mix.

In a roomy bowl, whip the Mascarpone cream cheese until it is softened, then fold the egg mix into the Mascarpone cheese, a little at a time, until it is fully blended.

Spoon half the Mascarpone mix over the crushed strawberries in the lunch box, and level the top with a spatula. Spoon the remaining half of the crushed strawberries on top of the Mascarpone cream, and then spoon the remaining half of the Mascarpone cream on top, as the final layer. Take a metal skewer, and very gently insert it into the mix, turning it around to create a “ripple” effect of red and white.

Bang the Tupperware box gently on the work surface, to evenly distribute the mix, and top with a few halved strawberries to decorate. Then cover the parfait mix with the overlapping cling film.

Freeze the parfait overnight. Just before serving place the open Tupperware box on the table, and place an upturned serving plate on top of it. Now turn the Tupperware box upside down, gently, so that the frozen parfait and the cling film slide down on the serving plate. Remove the cling film, turn the parfait over onto another plate to right it, and slice the parfait into individual portions. Serve. Enjoy!

It Asda happen to me


Apologies for terrible punnage.

I decided to shlep up to Asda, thinking that Friday afternoon would be juuust fine now that the kids are off school. Bad move. It was rammed. I actually smacked a woman on the bum with my basket - not deliberately, you understand, but she was in my way and not looking where she was going. It was for her own good, really.

So, I decided to peruse the clothes but I wasn't over impressed. They did have some nice ruched cotton cropped trousers but not in my size so I carried on to the foodie shop. I'm in the mood for trying things I haven't tried before but not in much of a cooking mood...so I ended up with a ready meal - mozzarella and tomato chicken with rosemary potatoes, which I'll team up with green veg later.

Think this blogging my food might be good for me as it will force me to think about the shite I eat on a daily basis! So far today I've had:

  • Eggs on granary toast with marmite: No problems there. Yummy.
  • Five dark chocolate Digestives: Was stress-bunny due to rubbish man not paying me for work I've done. Biscuits did not actually help any.
  • Potato with tuna and cheese.
I'm just about to treat myself to a slice of Asda Carrot Cake - which I'll report back on - and a coffee. All my home made coffee is from a Tassimo machine, which I am very attached to. I struggle to drink instant now...I've been ruined!

I'm not dieting by the way. I know I'm a big girl but I don't believe in diets and my ethos is to eat and enjoy. Don't like artificial sweeteners and low fat diet foods, I love fruit and veg, and my goal is to eat well, eat what I enjoy, and find lovely clothes to fit me. It's not much to ask, is it?

...a little about me.

I'm a big girl, I love my food and I love my clothes. The two are not always mutually compatible but sometimes I get a glimmer of hope that they can peacefully co-exist in a body that doesn't quite fit the size 12 mould.

Not quite? Who am I kidding? I'm a size 22!

Anyway. I love food as well, and I'm more than aware that I don't often make the best choices when it comes to scoffing it. Trouble is, I'm living on my own right now, although that's going to change soon, but I can't always be arsed to cook for myself! When I have the lovely boyfriend to stay I cook from scratch, and revel in the look on his face when he's just snaffled a whole bowl of my (OK, Nigella's) chilli.

I'm setting up this blog for a general gossip about food, fashion and also some of my musings on the mixed up, crazy-assed world we live in. I'm also going to include a 'what I'm eating' section - this, I hope, will encourage me to show off and cook nice things rather than getting by on endless cheese on toast and dark chocolate hob nobs.

I want to find out what you love to eat, recipes, favourite meals, favourite episodes of Come Dine With Me, and where you shop. Also - where do you get your clothes from, where are the very best size 16 plus jeans to be found and what do you do when you get an attack of the 'Fat Day' blues?

Right. I'm off to Asda for supplies. Might seek out some new cheapy clothes from George while I'm up there, I'm not proud! I took delivery of some more leggings and a crochet top from Simply Be this morning...it's GORGEOUS and was reduced from £50 to £20 so it would have been rude not to.
